Atelier Kimchi II

Around 3 weeks ago, my korean friend was teaching me again how to make kimchi. But this time: the kimchi blanc. Kimchi blanc does not use any chili as the ingredient so it's suitable for children or adults who can not eat chili.

As usual, my friend did not give any specific measurement for the ingredients. Sorry for that ;( I tried to remember the approximate amount of ingredients she put on the kimchi but I think after couple of attempts, you can adjust to what you like.




For the main ingredient:
- Chinese cabbage (or another name in wikipedia: napa cabbage), size medium

Cut this cabbage into 2 (as shown on the picture). Put in a big bowl and pour it with coarse Guérande salt (my friend said it's possible to use any salt at home but the best one is 'gros sel de guérande'. The salt must be spread evenly even on the inside part of the cabbage. Add a little water if it looks dry. Set aside for around 4-8 hours or until the cabbage harder part (stem) is becoming soft and not easily broken when we fold.

Note. In this cabbage part, it is important not to choose one that is too big because the process of salting will take so long (up to 12 hours for a big cabbage). 

I prefer to prepare this cabbage early in the morning and then continue the rest after my lunch time. But once again, it depends on the result of the cabbage after salting.




For the fish stock (picture above):
  • water
  • half of apple
  • half of onion
  • fish sauce (nuoc-mam can be used)
  • thick alga (I don't know where we can find this since my friend brought it from her country - in the picture, you can see it inside a bowl)
  • 2-3 small cloves of garlic
  • 1 cm of ginger
  • 4-5 dried anchovies

Boil all of those ingredients above in a pan with a slow heat. We have to make sure that the fish stock is enough boiling. 

While waiting, we can have lunch or anything else... :D 


Now for the other vegetables (and fruit) that accompany the chinese cabbage:
  • a half red bell pepper - slice long and fine
  • a half green bell pepper - slice long and fine
  • a half chinese white radish - slice long and fine
  • some chives (I used around 6 stems) - cut 3-4 cm
  • a half of carrot - slice long and fine
  • a quart of apple - slice long and fine (apple is optional)
  • one onion - slice long and fine
  • 5-6 big cloves of garlic - slice finely
  • mix of coarse Guérande salt and 'fleur de sel' (the difference of them can be seen in here)
  • sugar (powder)

Mix all those ingredients above in a big bowl and set aside to marinade for around 1-2 hours.

When everything is ready, follow this YouTube video to put the mixed sliced vegetables (and apple) inside the chinese cabbage.

So now the chinese cabbage is already in the plastic container. Last step is: take the fish stock and pour it into the plastic container. Fill the container with the stock until it's all covering the cabbage. 

Voilà! It's done now. We just need to close the container and put it at the room temperature until the next day when we can store it inside the refrigerator for, I don't know, couple days. Because at the end, it depends on us when we want to eat that kimchi. The longer we keep it, the taste will develop differently. People say, the taste is better if we keep it longer at the fridge. My friend often makes a big batch of kimchi in a big container and then she keeps it for one or two months. Every time she needs to serve a little part of it, she just takes a little portion and put it into a small container. The rest stays in the big container.

Atelier Kimchi

I got an opportunity to learn how to make kimchi from one of my Korean friends. And she is an experienced cook, her speciality is Korean and Japanese food. So I am lucky :D I learned a lot from her. And since three of us (the chef, me and one japanese friend) are coming from different culture, we also shared habits and informations related to cooking. Cool!

Butternut soup with Champignons

Resep ini diambil dari kelas masak yang saya ikuti tahun lalu. Nama dalam bahasa aslinya adalah velouté de butternut aux champignons. Velouté merupakan sup krim yang sering kita temukan di... mana-mana :D Dan dalam resep ini, sup krimnya menggunakan butternut squash dan jamur champignon.

Resep untuk 6 orang (porsi untuk starter)

Bahan:


  • 1 butternut, kupas, buang bijinya, cuci bersih dan kemudian potong-potong sebesar dadu
  • 1 bawang bombay, iris tipis
  • 1 liter kaldu ayam
  • Jamur champignon (sekitar 20 yang besar, atau sesuai selera), cuci bersih dan iris-iris
  • 1 siung bawang putih, cuci bersih dan iris halus
  • Parsley (kurang lebih 2 tangkai, kalau fresh), cuci bersih dan iris halus
  • 1 sdm fresh cream
  • Minyak olive
  • Garam dan merica


Cara memasak:

  1. Dalam panci, tumis bawang bombay dengan sedikit minyak olive
  2. Masukkan potongan butternut dan masak selama kurang lebih satu-dua menit sambil sesekali diaduk
  3. Masukkan kaldu ayam, masak sampai mendidih dan sampai empuk
  4. Sambil menunggu butternut, ambil pan dan tumis jamur dengan sedikit minyak olive
  5. Umumnya, jamur akan mengeluarkan sedikit cairan sewaktu ditumis. Setelah cairan tsb menghilang, masukkan irisan bawang putih dan parsley, masak selama kurang lebih 5 menit sambil sesekali diaduk. Tambahkan garam dan merica secukupnya
  6. Kembali ke butternut. Setelah butternut matang, matikan kompor kemudian gunakan hand blender untuk menghancurkan butternut di dalam panci. Kl tidak ada hand blender, coba dgn blender biasa
  7. Setelah sup halus, tambahkan satu sendok makan fresh cream dan aduk rata. Bumbui dengan garam secukupnya (terkadang orang lebih suka rasa asli butternut yang yummy tanpa tambahan garam)
  8. Cicipi baik sup maupun tumisan jamur sebelum disajikan. Tambahkan garam bila kurang
  9. Gunakan piring saji cekung (atau mangkok juga boleh) dan tuangkan sup di dalamnya. Bila ingin menghias sedikit, teteskan beberapa krim di atas sup secara acak. Kemudian, letakkan sekitar 2 sendok makan jamur di tengah-tengah sup
  10. Sajikan.

Happy New Year!

Again, we meet a new year. Time flies quite fast, right?

At the new year's eve, as usual we made a family dinner. Just for of us. But this time, not serving Indonesian food, but Japanese! We made sushis. Before the sushis were served, we had a simple wakame soup as a starter. And the dessert? Chocolate cupcakes... :)

And today, I could finish my first sewing project in 2014, a pinky dress for my daughter. The pattern was from a Japanese sewing book: Vêtements amples à superposer by Mayuko Murata. It's the same book that I used to make two others (at previous posts). It seemed that I started to enjoy more the process because I already understood the basic techniques (from the book). 

Et voilà! Happy new year! May 2014 give us more time to sew! *it's a big dream for me ^_^*

Tuna Steak with kinda niçoise salad

Kalau kamu suka ikan dan salad, mungkin bisa mencoba satu resepnya Jamie Oliver ini: Griddled Tuna kinda Niçoise Salad. This recipe is starting to be one of our favorites. Rasanya segar... Cocok untuk musim panas yang tidak kunjung datang.

Kami memasak dengan resep ini baru dua kali dengan menggunakan bahan yang ada di rumah. Berhubung kami tidak pernah membeli anchovy fillets, jadi kami skip di situ. Selain itu, kami juga tidak menggunakan griddle pan karena pan kami sangatlah tidak menyenangkan (lama sekali matangnya). Jadi kami memanggang tuna steak di dalam oven. Cara penyajiannya, tentu tidak sama dengan cara Jamie. Oleh karena itu hasil di foto ini tidaklah sama dengan yang ada di blog Jamie Oliver.


Bagi saya dan anak-anak yang awalnya tidak terlalu suka salad ber-dressing mustard, namun waktu kami merasakan salad dalam resep ini, kami sangat lahap menyantapnya. Red wine vinegar bisa diganti vinegar biasa. Tomatnya juga bisa menggunakan tomat ceri yg dipotong-potong menjadi dua. Baguette bisa diganti dengan roti cereal.

Jangan lupa, liquidizer maksudnya blender...

My First Atelier Cuisine

Years ago, during my study time at the university, I took one baking class (3 days) with my Psychology friends. It was a baking thing. Bread, croissant, sponge cake... what else? I don't remember. Mostly about the bread. The class was at a baking school in Bogasari Flour Mills, a giant flour company in Indonesia. Now the baking school becomes Bogasari Baking Center. At my time, it was free. We just needed to pay for the group transportation from our university in Depok until the baking school at North of Jakarta.

Today, I had my first cooking class. My first. Remember that I won the contest of balcony gardening by d'Aucy? I won the cooking class for 4 persons. So I went to the cooking class with 3 others: my husband, my sister-in-law and my friend, Antie. It was fun... At the end, we had lunch together, tasting all the food that we made: Velouté de butternut aux champignons, Lasagnes aux légumes et Tatin de fenouil (all about vegetables!). Meat Balls

With 500 grams of minced beef, I made meat balls that were enough for 6 person-meal. At the beginning I planned to make meat balls with spaghetti. But then... I changed my mind. Tomatoes, green peas, onion, garlic, salt, pepper... This simple meat balls were served together with buttered fussili + a bit paisley herb (not on the pic).


Bon appétit!

PS. Meat balls: 500 gr minced beef, cilantro, garlic, onion, 1 sandwich bread, 3 tbsp tapioca, salt, pepper, ... I don't remember the rest :( Ah, oui... 2 ice cubes :D Put all in a food processor. Make it into little balls. Boil some water. Put the meat balls into the boiling water. Wait until the meat balls are going up (to the water surface). Dry and put them all in a bowl.

Pudding Coklat & Klepon

Ini versi pemanfaatan coklat2 yang dikasih kerabat & teman kpd anak2 saya. Terlalu banyak sih, jadi dibikin pudding coklat aja untuk dibawa ke acara kumpul2 dgn teman2. Atasnya disiram fruit cocktail kalengan.

Spring... Rolls...

Musim semi yg indah. Paling pas minum teh di kebun (baca: balkon) sambil makan spring roll *sok sehat, hehe...*

Berkat tanaman herbs di balkon, kami jd sering bikin spring roll. Awalnya tentu dibuat seperti yg umum (rice paper diisi ayam suwir, udang, toge, cilantro, mint). Lama2 bertema suka-suka :D entah jenis isinya dikurangi atau diganti. Pokoknya asyik2 aja...

Homemade Chicken Nuggets

Watching the video from Mama Koki Handal about rainbow nuggets, I said to my daughter (the big one):

"So, do you really want to try to make chicken nuggets?"

She said yes. Actually we have already seen one video in YouTube about making simple chicken nuggets. But the rainbow version made us curious.

With broccoli & carrot, this was the result. The photo was taken during earth hour last weekend.

Second photo, before fried. It looked like fish terrine made by my mother-in-law ;)

Now we have so many homemade chicken nuggets in the freezer.

Taboulé & Houmous Libanais


In English: Tabbouleh and Hummus, specilities of Lebanon.

My first taboulé and houmous were made for today's dinner. It was very easy but a bit long in preparation (chopping, I mean). Fortunately, my baby was sleeping when I chopped, chopped and chopped :D

I'm happy that my husband loved those dishes I made. And he said "Delicious!" May be he was just missing the Lebanon resto that we used to visit in Lyon *because I do miss it...*

Crème Caramel


Saya termasuk pencinta crème caramel namun sering ragu2 utk membuatnya sendiri. Mungkin karena dulu jaman saya kecil, ibu saya pernah membuatnya dan caramel-nya keras membatu. Jadi, di bagian itu, terbilang gagal. Mungkin pengalaman tsb menjadi semacam warning bagi saya yg menandakan bhw membuat caramel itu sulit. Namun kalau diingat2 lagi, jaman SD pula saya sering bereksperimen membuat caramel dgn gula pasir, sendok stainless steel dan lilin. Jadi, sendok berisi gula pasir saya pegangi di atas api lilin. Dan selalu berhasil. Caramel yang telah jadi biasanya saya tuang ke lantai yg sudah bersih, dibuat kepingan2 kecil, dan kemudian saya menunggu sampai dingin. Bila sudah dingin, kepingan caramel itu saya masukkan ke mulut, happ... Enak... ^_^

Enough talking. Now about the main subject.

Berhubung gengsi utk meminta resep andalan ibu mertua, dan kebetulan ada buku resep bonus dari majalah Marie Claire Idées edisi akhir tahun lalu, jadi saya pikir lebih baik jajal crème caramel dari buku tsb saja. Sekalian ngetes, resepnya benaran enak atau tidak.

Pertama mencoba, semua sudah sesuai instruksi. Untuk urusan bikin caramel-nya, saya memantau panduan di site David Lebovitz. Sukses! Kemudian semua berjalan sesuai resep.

Setelah oven berbunyi, ternyata crème caramel masih liquid sekali. Bahkan konsistensinya masih di bawah vanilla flan-nya sobat suami. Akhirnya saya browsing2 di Youtube dan mengulang2 semua bagian di video ini untuk mencari tahu dimana kesalahan saya (or, resep). Sampai midnight, saya masih mantengin Youtube :D

So, keesokan paginya, saya putuskan recooking. Maksudnya, saya masukkan lagi wadah crème caramel ke oven dengan suhu lebih tinggi, yaitu 180 dercel, dan lamanya 1 jam (di buku resep 45 menit, 160 dercel). Air utk bain-marie, saya didihkan dulu spt dalam video Youtube (link di atas). Dan hasilnya... syukurlah... Okeh!

Untuk crème caramel pertama saya ini, saya tidak menggunakan cetakan2 kecil untuk mempersingkat waktu. Apalagi saya tidak menemukan cetakan2 Serikaya yang sesuai utk "saudara"-nya ini (hm, mungkin ada di salah satu box di gudang, belum dibongkar paska pindahan).

Walau tampilannya agak brulée, namun saya suka sekali rasanya. Tidak terlalu manis. Pas :)

Our New Year's Dinner


Everything was simple since we had limited time for the preparation and cooking. Still, it was fun!


So, these were all the food that we enjoyed during New Year's dinner, my first with my little family. In 2007 & 2008, I celebrated it with my hubby's friends in Paris. In 2009, with my Indonesian friends in Lyon (I was pregnant!). And then, 2010 was with my in-laws family in St. Martin d'Auxigny.

I love the simple event we made. And I really enjoyed working together with my family in preparing all of these. Next year, I hope it will be the same :) I know it doesn't look special, but it was very special for us.

Champignon Soup


My first posting here in 2011, yeyy! Happy New Year, all!

And now, let's talk about a delish thing.

During autumn and winter, we're always dealing with: soup. Hot and yummy soup will save us from cold weather outside. So, yesterday I tried a recipe of Crème de Champignons. It was very delicious!

The original recipe is here. I added some chives because I wanted to :)

The result, my family loved it. Me too! We plan to make again someday. Yes, we have to.

Kale Soup ala Zuppa Toscana


Browsing resep berbahan kale, ternyata kebanyakan merujuk kepada Zuppa Toscana. Kalau melihat resep copy-an dari Olive Garden Resto, kelihatannya ada bbrp ingredients yang tidak bisa saya beli karena berbahan dasar pork. So, akhirnya saya menggantikan Italian sausage dengan beef sausage dari Isla Délice. Dan rasanya, enak bok!

It's okay ngga bisa tasting the real Zuppa Toscana. This soup that I made was already très bon...

Grilled Salmon with Spicy Yellow Rice


Kenapa saya suka beli ikan salmon? Karena memasaknya mudah sekali. Either direbus, dikukus, or dipanggang dalam oven. Dengan sedikit bumbu, rasanya sudah enyaak sekali... Filet salmon (dan tuna) merupakan solusi yg tepat saat saya malas memasak. Dan gizinya sangat baik untuk anak2 tercinta :)

Pineapple Slicer


Dua hari lalu, saya mengunjungi Alice Délice untuk membeli alat pengupas nanas ini. Semalam baru kami coba dan hasilnya:
  • Memang benar sang nanas terkupas dengan mudah, namun
  • Berhubung nanasnya matang sekali, jadi putaran alat membuat jus yang banyak

Kata suami: Ini dia sup nanas... ^_^

Well, not that bad kok.

Sushi


Dulu pernah coba2 bikin sushi sendiri saking nge-fans-nya pada makanan Jepang. Bahan dan peralatan dibeli di toko Asia, Paris Store Venissieux. Tapi pada percobaan pertama (3 Jan 2009), berasnya bukan yang khusus utk sushi, melainkan beras yang biasa kami makan yaitu beras Thai. Hasilnya kurang bagus walau rasanya tetap enak. Percobaan kedua, berasnya ganti, khusus yang untuk sushi. Hasilnya lebih bagus. Butiran nasi lebih rekat begitu digulung.

Setelah itu kami membeli alat yang lebih praktis, yaitu Sushezi. Sampai sekarang belum dicoba T_T
